Quinoa Salad

Ingredients

1 Cup Quinoa
Small knob of Butter
1/4 cup sunflower Seeds
1/4 cup Pumpkin Seeds
1/4 cup raw Cashew nuts
6 Spring Onions
1 Red Capsicum diced
1/4 cup chopped parsley
1/3 cup Red Currants

Dressing

4 tbs Soy Sauce
1/3 cup Olive Oil
2 tsp lemon Juice
1 clove Garlic Crushed

Directions

Boil quinoa in 2 cups of water for 30min approx till water is absorbed
Add butter and set aside to cool
Lightly fry Sunflower seeds and pumpkin seeds and cashew nuts for 2-3 min
Mix Dry ingredients with cooked Quinoa in a bowl
Mix Dressing ingredients together and then toss well with the salad

Birdseed Bars

This delicious bar will be a fantastic addition to the lunch boxes and just for an afternoon snack!
All it takes is a few ingredients from your cupboard and from ours!

Ingredients

2 cups rolled oats
1 cup sesame seeds
1 cup pumpkin seeds
1 cup sunflower seeds
1 cup raisins, dates or cranberries
1 cup roasted mixed nuts
120 grams butter, melted
1/2 cup coconut sugar
1/3 cup golden syrup or manuka honey
1/3 cup peanut butter

Directions

Preheat oven to 180°C and grease a 30 x 24 cm slice tin.
Combine the rolled oats, sesame seeds, pumpkin and sunflower seeds in a roasting dish, spread out evenly and roast until lightly golden. When cool mix through dried fruit.
Combine butter, sugar, golden syrup or honey, peanut butter and melt together.
Add dry ingredients and stir to combine evenly.
Press into the prepared tin and refrigerate for 2-3 hours until set before cutting into bars.

Apricot Bliss Balls

If you’re looking for a healthy snack when you’re feeling a little peckish you have found the right one. The Apricot Bliss Balls are not only made from most of the products you can buy right from our wesbite, but it also has no sugar and requires no cooking time! They are a quick and easy treat, that look great and don’t take hours of slaving away in the kitchen!

Ingredients

1/2 cup dried dates
1/2 cup dried apricot
1 cup brazil nuts
1 cup cashew nuts
1 & 1/4 cup desiccated coconut
2 teaspoons vanilla coconut
Zest of 1 orange
Juice of 1/2 orange or 1/2 cup of orange juice

Directions

Put the dates, apricots, and orange zest and juice into a food processor, and whizz until finely chopped.
Add the nuts and 1 cup of the coconut, and the vanilla extract, and process until the mixture resembles fine breadcrumbs.
Put the remaining 1/4 cup of coconut on a dinner plate.
Take about a teaspoonful of the mixture, roll it into a ball. and then roll the ball in the coconut, making sure it is evenly coated.
Continue with the remaining mixture until finished. 
Make the balls as big or small as you like.

Refrigerate for 2-3 hours.
